Maple bacon, chipotle and avocado pancakes

Bacon pancakes are probably the most iconic kind of savoury pancakes going! These bacon and maple syrup pancakes add a twist to this classic Pancake Day dish by introducing creamy avocado and chipotle mayo.

The crispiness of the bacon welds perfectly with the soft textures of the avocado and chipotle, with the latter also adding a subtle spiciness to the pancakes. Garnish with coriander leaves and drizzle over lime juice to complete the dish.

Banana soufflé pancakes with maple caramel sauce

Banana is another incredibly popular pancake topping, and the pairing doesn’t get much better than with these soufflé pancakes! The pancakes are prepared as normal and the banana is stacked on top before being soaked in a maple and caramel sauce.

The secret to this recipe is the sauce. Made with double cream and maple spread, it boasts a rich, caramel-like flavour that pairs perfectly with the pancakes and fresh banana. Pour over the plate generously!

Chocolate-stuffed American-style pancakes

If you’ve got a sweet tooth and feel like testing test your baking skills this Pancake Day, look no further than these chocolate-filled pancakes. They’re made by spreading frozen chocolate over one layer of pancake batter and then adding another one on top.

The recipe requires a gentle hand, but the result is certainly worth it – what’s better than fluffy pancakes oozing with melted chocolate? If you want to feel slightly less guilty, serve with your choice of fresh fruit.

Vegan pancakes with ice cream and blueberries

Sweet, simple and suitable for vegans, these pancakes with ice cream are the perfect crowd-pleaser for Pancake Day. The recipe uses chickpea flour and your choice of oat or almond milk for the batter and coconut milk for the ice cream.

The result is every bit as indulgent as its dairy-based equivalent, yielding thick and fluffy American-style pancakes. Add the ice cream, top with blueberries, drizzle over maple syrup and then dig in!

Korean fried chicken pancakes

Fried chicken and fluffy pancakes? A surprisingly delicious combination! These chicken pancakes are great fun to make and can enjoyed as a brunch or dinner. If you don’t have a deep fryer, simply cook the chicken in a large pan over medium heat.

The fried chicken thighs are coated in a sweet and spicy gochujang sauce consisting of chilli paste, tomato ketchup, soy sauce and pure maple syrup, before being sprinkled with sesame seeds and finally topped with sliced spring onions.

Maple syrup: the perfect sweetener for Pancake Day

From honey and powdered sugar to caramel sauce and golden syrup, there’s a wide range of toppings that can be used to sweeten your pancakes. You might be wondering, what makes maple syrup the best? And isn’t maple syrup the same as golden syrup?

To answer both of these questions, maple syrup is a natural sweetener with a distinct, caramel-like flavour and a consistency that’s ideal for drizzling over pancakes or using in the batter. Made from the sap of the maple tree, maple syrup also offers greater nutritional value than its processed alternatives.
