If you’re planning a lazy day, you can still enjoy a tasty homemade meal without exerting much effort, courtesy of our range of quick and easy recipes. 

Each recipe takes less than 30 minutes to prepare and is enriched with the natural sweetness of Canadian maple syrup.

Maple chicken pitta pockets

Looking for a light dinner option? These chicken pitta pockets are so simple to make and are also packed with protein. 

The recipe sees chicken breast, dried cranberries and small slices of apple coated in a maple-infused yoghurt sauce and then topped with fresh parsley. 

All you need to do is combine the ingredients together in a bowl – ensuring the flavour from the maple syrup infuses with the chicken – and then stuff them into sliced pitta bread. 

This recipe is great for using up leftover chicken and also works well with store-bought slices of cooked chicken breast.

Maple panzanella salad

Perfect for a quick lunch, this panzanella salad is a light yet satisfying dish that can be whipped up in minutes, leaving you with more time to relax and enjoy your lazy day. 

Made with fluffy mozzarella, sweet peaches and crispy brioche croutons, the recipe is rich in flavour and texture. 

It’s brought together by the dressing, which sees maple syrup paired with capers, lemon juice and olive oil. 

This can be prepared as the croutons cook in the oven, leaving you with the simple task of assembling the salad once everything is ready. 

The simplicity of the recipe means you can easily add other ingredients – like olives or cherry tomatoes – to suit your own tastes.

Maple panzanella salad

Peanut butter, banana and maple no-bake mini cheesecakes

Nothing says hassle-free dessert like a no-bake cheesecake! Easy to prepare and utterly indulgent, these no-bake mini cheesecakes are the perfect way to close out your lazy day. 

The base layer is made by mixing peanut butter, maple syrup and vanilla extract with oat flour and salt to form a delicious, dough-like mixture. 

Cream cheese mixed with maple syrup forms the second layer, followed by slices of banana and more peanut butter. 

Finish by melting your favourite dark chocolate and then pour the oozing liquid over the top layer. 

You’ll need to wait a few hours for the cheesecakes to harden in the fridge, so remember to make this recipe ahead of time.

King prawn and spicy maple coconut curry

Don’t be fooled – this prawn coconut curry may look like the result of some hard graft in the kitchen, but in reality it only takes 30 minutes to make! 

This quick and easy recipe brings together succulent king prawns with a fragrant blend of spices, all enhanced with the sweet touch of maple syrup. 

Start by flash-frying the prawns for a few minutes and then set them aside for later. In the same pan, fry ginger, garlic and spring onions before adding red chillies and curry paste.  

After a few more minutes, the maple syrup is poured in together with the coconut milk, and while the sauce is left to simmer you can prepare the rice. 

Five minutes before serving, return the prawns to the sauce and garnish with fresh coriander and lime juice for a simple but delicious curry!

Frozen strawberry, maple and yoghurt bark

If you fancy a healthy dessert to round out your lazy day, why not try this simple yet delicious yoghurt bark? 

This straightforward dessert is essentially just frozen yoghurt flavoured with maple syrup, vanilla extract and lemon juice. 

After mixing these ingredients, fresh berries and roasted almonds are added before leaving the mixture to freeze overnight. 

Like the no-bake cheesecakes, you’ll need to prepare this recipe ahead of time, but the beauty of yoghurt bark is that it can be made in bulk and enjoyed straight out of the freezer over several days.
