Seasonal seafood recipes to enjoy during autumn



As summer draws to a close and cooler temperatures set in, there’s something extra special about a hearty, homemade meal. 

Autumn also coincides with many types of fish coming into season in the UK, and with this in mind we’re sharing five delicious seafood recipes.

Each recipe is enriched with pure maple syrup, adding a splash of natural sweetness to your favourite seafood dishes.

Maple-cured trout tartare

Starting off the list is this stunning trout tartare, delicately prepared – with a helping hand from maple – by brand ambassador James Golding. 

The dish combines the subtle taste of trout with the sweetness of maple sugar and maple vinegar. 

Maple syrup is used as part of the dry-cure mixture, while maple vinegar makes its way into the dressing. 

Additional flavour is provided by the earthy beetroot juice and punchy horseradish sauce. 

These ingredients are spread onto the plate in a circular motion, with the trout tartare carefully spooned on top.  

A splash of the maple dressing, followed by a few slices of radish and several sprigs of dill, provide the finishing touches.

Pan-fried maple salmon

Perfect for adding to your midweek rotation, this pan-fried maple salmon dish is quick, simple and utterly delicious! 

Most of the preparation comes from the maple glaze, which is made by mixing maple syrup with soy sauce, sesame oil, ginger, garlic and chilli. 

These flavours come together incredibly well, striking a great balance between sweet, salty and spicy. 

Once the salmon has been left to marinate in the glaze for an hour, all that remains is to fry the fillets for a few minutes on each side. 

The aim is to get a light crispiness on the outside of the fillets, with the salmon on the inside remaining flaky and succulent. 

Complete the dish by serving with your favourite vegetables and garnishing with lime and fresh coriander.

Pan-fried maple syrup salmon

Mediterranean seared sea bass with maple dressing

Transport yourself to warmer climates with this Mediterranean sea bass, enriched with a splash of pure maple syrup. 

Another incredibly simple recipe, this dish is great for busy weeknights and can be made from start to finish in under half an hour. 

Start by sweating shallots and garlic in olive oil, before adding chopped peppers, pure maple syrup and lemon juice to complete the dressing. 

With the dressing set aside, the sea bass fillets are then fried in a separate pan until golden and slightly crispy. 

The dressing is finally mixed in with the sea bass, infusing the fillets with sweet, zesty flavour.

Sizzling maple king prawn skillet

Prawns caught in UK waters are currently in season, so there’s no better time to try these sizzling prawns. 

Originally made for grilling, this recipe can just as easily be made by cooking the prawns on the stove. 

Whichever method you prefer, the process begins by mixing garlic, chilli, paprika, maple syrup and olive oil to form a delicious marinade. 

The prawns are then left to soak in the mixture for 10 minutes, before being cooked high and fast for a few minutes on each side. 

The complementary flavours of the chilli, garlic and maple syrup provide the perfect seasoning for the prawns.

Maple teriyaki-glazed cod

Rounding off the list is this quick and easy teriyaki cod, sweetened with a touch of Canadian maple syrup. 

The teriyaki marinade is made by mixing soy sauce with white wine, mirin, maple syrup, chilli powder and several other ingredients. 

Half of the mixture is brought to a boil and then left to simmer until it forms a thick glaze, ready for soaking the cod fillets before they enter the oven. 

The other half is brushed onto the cod just before serving, adding extra flavour and helping the fillets retain a moist, succulent texture. 

Serve with fluffy rice and your choice of vegetables or personalise the recipe even further by swapping the cod for another type of fish.
