Apple, Plum, Pear and Maple Spiced Crumble

Ingredients

For the filling

  • 8-10 plums, stoned & halved
  • 3 apples, peeled, cored & chopped
  • 2 pears, peeled, cored & chopped
  • 1 orange, zest & juice
  • 1tsp vanilla bean paste
  • 1tsp ground cinnamon
  • 70g maple sugar
  • 2 balls steam ginger
  • 1tbsp ginger syrup 

For the crumble

  • 150g butter
  • 200g plain flour
  • 80g maple sugar 
  • 70g porridge oats
  • 70g pecans, chopped
  • 30g maple flakes
  • 1tsp ground cinnamon 

To serve

  • Custard
  • Drizzle of pure Canadian maple syrup (preferably amber for its rich taste)
  • Edible flowers (optional)

Method

  1. Preheat oven to 160 fan. Prepare the fruit and place into a large baking dish. Add the zest and juice of 1 orange, vanilla, cinnamon, sugar, stem ginger and syrup on top and mix well. 
  2. For the crumble, rub the butter and flour between your fingers until they resemble chunky breadcrumbs then add the sugar, oats, nuts, maple flakes and the cinnamon and roughly mix. 
  3. Scoop the crumble mixture on top of the fruits and roughly smooth to level.
  4. Bake for 30-40 minutes until fruits are bubbling and topping is golden brown. 
  5. To serve, scoop out the fruity crumble into a bowl, top with custard, a drizzle of maple syrup and edible flowers. Enjoy!

This twist on the classic apple crumble combines seasonal apples, juicy plums, and sweet pears, topped with a nutty oat and pecan crumble.

Serve it warm with a generous drizzle of pure Canadian maple syrup and a side of custard for the ultimate indulgence.
