Bacon, Spinach and Maple Dip

Ingredients

  • 10 slices of bacon

  • 28g cream cheese, softened

  • 75g mayonnaise

  • 2 tbsp maple syrup (preferably dark syrup for its robust taste)

  • 75g sour cream

  • 1 tsp paprika

  • 450g frozen chopped spinach, thawed and squeezed to remove excess liquid

  • 100g freshly grated Parmesan
  • 100g shredded mozzarella

Method

  1. Preheat the oven to 180°. In a large non-stick frying pan over medium heat, cook bacon until crispy, 8 minutes. Drain on a paper towel-lined plate, then chop into small pieces.

  2. In a large bowl, stir together cream cheese, mayonnaise, maple syrup, sour cream, garlic powder and paprika and season with salt and pepper. Fold in chopped spinach, bacon, Parmesan and 3/4 of the mozzarella.

  3. Transfer dip to a baking dish and sprinkle with the remaining mozzarella. Bake until golden and bubbly, about 25 to 30 minutes.

  4. Serve warm with accompaniments of your choice.
