Bacon, Spinach and Maple Dip

Ingredients

10 slices of bacon

28g cream cheese, softened

75g mayonnaise

2 tbsp maple syrup (preferably dark syrup for its robust taste)

75g sour cream

1 tsp paprika

450g frozen chopped spinach, thawed and squeezed to remove excess liquid
- 100g freshly grated Parmesan

100g shredded mozzarella
Method
Preheat the oven to 180°. In a large non-stick frying pan over medium heat, cook bacon until crispy, 8 minutes. Drain on a paper towel-lined plate, then chop into small pieces.
In a large bowl, stir together cream cheese, mayonnaise, maple syrup, sour cream, garlic powder and paprika and season with salt and pepper. Fold in chopped spinach, bacon, Parmesan and 3/4 of the mozzarella.
Transfer dip to a baking dish and sprinkle with the remaining mozzarella. Bake until golden and bubbly, about 25 to 30 minutes.
Serve warm with accompaniments of your choice.
