English muffin with maple glazed bacon and maple hot ketchup

Ingredients

  • 4 English muffins 
  • 500g sausage meat 
  • 300g smoked streaky bacon 
  • 4 tablespoons of pure Canadian maple syrup (preferably amber syrup for its rich taste) 
  • 6 clarence court eggs 
  • 3 tablespoons of butter  
  • 2 large Maris Piper potatoes 
  • 3 tablespoons of vegetable oil 
  • 20g fresh rosemary
  • 4 tablespoons of ketchup 
  • 4 tablespoons of hot sauce 
  • 4 slices of smoked gouda cheese 
  • Salt and pepper to taste 

Method

  1. Grate the potatoes, wash in cold water and then squeeze out all the moisture. 
  2. Mix with rosemary and salt, add a tablespoon of oil and a tablespoon of butter to a pan then press in the grated potatoes. Allow the base to set and crisp up before flipping over and repeating the process until cooked through and golden. 
  3. Lay the bacon on a flat baking sheet on top of parchment paper, top with more parchment and another tray to weigh down. 
  4. Bake at 180°C until it starts to crisp up, remove the top tray and parchment. Brush with maple syrup every 2 minutes until crispy. 
  5. Mix the ketchup with hot sauce and maple syrup then set to one side. 
  6. Shape the sausage meat into patties and fry in a tablespoon of oil pressing down to brown the patties before flipping over and repeating the process. Top with the cheese and cover with a lid to melt. 
  7. Toast the muffins in a tablespoon of butter until golden.
  8. Heat a tablespoon of butter in a frying pan and add the eggs before seasoning with salt and pepper. 
  9. Assemble the muffin with the hot maple ketchup on the bottom bun, then add the bacon, sausage patty with cheese, fried egg and more maple hot ketchup and top with the lid.
