Ingredients

For the pancakes

  • 150g self-raising flour
  • 25g matcha powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp maple flakes
  • 150ml milk
  • 1 egg

For the topping

  • Drizzle of pure maple syrup (preferably amber syrup for its rich taste) 
  • 1 tbsp maple flakes
  • Assorted berries
  • 1 tbsp yoghurt

Method

  1. Whisk the dry and wet ingredients together in a medium bowl until they form a smooth batter.
  2. Before adding the pancake batter mixture, grease your frying pan or griddle. Remember, to achieve fluffy pancakes, it’s important to cook them low and slow.
  3. Wait for the top of the pancake to begin bubbling before flipping it over. Cook until both sides are a beautiful golden colour and the pancake has risen to about 1cm in thickness.
  4. Repeat the cooking process until all of the batter has been used up.
  5. Once the pancakes are done, add your desired toppings. In this recipe, Remi uses yogurt, fruit, maple syrup, and maple flakes to create a delicious, well-rounded breakfast dish.
