Iced Maple Chai Latte

Ingredients

  • 8 tbsp pure maple syrup (preferably amber syrup for its rich taste)
  • 500ml cups water
  • 1 cinnamon stick
  • 3 whole cloves
  • 4 green cardamom pods, cracked open and deseeded (we used seeds and pods)
  • 3 black peppercorns
  • 1 star anise
  • ½ tsp fennel seeds
  • 8g sliced fresh ginger
  • 3 black tea bags or sub 3 tsp loose leaf black tea
  • 250ml whole milk

Method

  1. Place a saucepan over high heat and add water.
  2. Add the whole spices and ginger as the water is starts to a boil.
  3. Add the tea bags and reduce the heat to a simmer, allowing the tea and spices time to infuse.
  4. Once lightly steaming, froth milk with a frother or whisk to create light foam.
  5. Add milk and maple syrup, keeping the froth back.
  6. Simmer for another 5 minutes.
  7. Strain the tea between two mugs.
  8. Pour into cups through a strainer and discard tea bags and spices.
  9. Top each latte with a bit of the milk foam and dust with a pinch of cinnamon.
