Ingredients

For the doughnuts:

  • Plant-based milk
  • Vegan butter
  • Packet yeast
  • Maple sugar
  • Bread flour
  • Pinch of salt

For the filling:

  • Dairy-free double cream
  • Pure maple syrup (preferably dark syrup for its robust taste)
  • Maple sugar, for coating the doughnuts
  • Cinnamon (optional)

For the maple glaze:

  • Pure maple syrup (preferably dark syrup for its robust taste)
  • Plant-based milk

Method

  1. Prepare the dough by mixing together warmed milk, butter, sugar and yeast.
  2. After mixing the ingredients, add flour and salt to form the dough.
  3. Knead the dough for 8–10 minutes, adding two more tablespoons of flour gradually to aid kneading.
  4. Tip the dough out onto a floured surface and roll into a ball (if sticky, add a touch more flour).
  5. Place the dough in an oiled bowl and cover it up. Let it rise in a warm place for 1–2 hours until doubled in size.
  6. Meanwhile, whip the cream with the maple syrup to form stiff peaks. Fill a piping bag and refrigerate.
  7. Roll out the dough onto a floured surface (1.5-2cm thick) and cut 8–9 circles (roughly 5cm in size). Add to tray lined with baking paper.
  8. Let the pieces of dough rise for 30 minutes.
  9. Mix together the ingredients for the maple glaze, and then brush this onto the pieces of dough. Bake in the air-fryer 2-3 pieces at a time at 175°C for 9 minutes, flipping over halfway.
  10. Let the doughnuts cool completely then roll them in sugar.
  11. Fill the doughnuts with the maple-whipped cream and enjoy immediately!
