Maple and Baileys Panettone and Butter Pudding

Ingredients
- 150ml double cream
- 150ml milk
- 50g chocolate chips
- 50g maple sugar
- 50g sultanas
- 100g melted unsalted butter
- 2 tbsp maple syrup (preferably golden colour for its delicate flavour)
- 500g sliced panettone
- 2 eggs
- 80ml Baileys or equivalent Irish cream liquor
Method
- Heat the oven to 180C.
- Grease an oven proof dish with butter, then use the rest to spread on the sliced panettone
- Cut the Panettone into triangles and arrange so that they overlap in the dish. Sprinkle the sultanas and chocolate chips between the layers.
- Mix the unsalted butter with maple syrup then spread onto the slices with a pastry brush.
- Beat the eggs and mix with the milk, cream, vanilla extract, Baileys and maple sugar, then pour over the panettone slices.
- Lightly press down so the slices absorb the creamy mixture.
- Bake for 30 minutes or until the top is golden and the pudding is set.
- Serve warm with ice cream or custard.
