Maple Prawn Cocktail

Ingredients

Juice of 1/2 lemon, plus extra lemon wedges to serve

300g mayonnaise

60g ketchup
-
5 drops tabasco
-
3 drops Worcester sauce
-
1 tbsp maple syrup (preferably amber syrup for its rich taste)

1 ripe avocado
-
1 red radicchio lettuce, leaves separated, washed

10 cooked prawns, peeled
-
1 tbsp extra virgin olive oil
-
Cracked black pepper, to season

Handful chives, chopped
Method
Combine lemon juice, mayonnaise, ketchup, tabasco, Worcester sauce and maple syrup in a bowl.
Cut avocado into thin wedges. Arrange lettuce on a serving platter and dollop mayonnaise mixture in the centre of the leaves. Top with prawn and sliced avocado.
Drizzle with olive oil and garnish with cracked black pepper and some chives, serve immediately with lemon wedges.
