Maple Spiced Butter
Christmas
Ingredients

70g dried cranberries, finely chopped

Zest of 1 orange and the juice of half

2 tsp mixed spice

250g unsalted butter, softened

2 tbsp maple syrup (preferably amber syrup for its rich taste)

Salt to season
Method
- Mix all of the dry ingredients together in a bowl with the soft butter and season generously with salt. Place the bowl in the fridge for approximately 30 minutes, or until the butter has firmed slightly.
- Remove bowl from the fridge and tip out onto clingfilm. Roll into a cylinder, wrap in the cling film and place in the fridge for a few hours to fully firm up. This can be made well in advance and kept in the fridge or frozen until needed.
- Chef’s tip: The butter would make a lovely festive gift, simply wrap in brown paper and use string or ribbon to secure.
