For the passionfruit maple martini

  • One handful of ice cubes
  • 50ml vanilla vodka
  • 30ml pure maple syrup (preferably amber syrup for its rich taste)
  • 50ml passion fruit liqueur
  • 25ml lime juice freshly squeezed
  • 100ml passion fruit juice 
  • 50ml champagne or sparkling wine
  • ½ fresh passion fruit

Method

  1. Put the ice in the cocktail shaker.
  2. Pour in the vanilla vodka, maple syrup, passion fruit liqueur, lime juice and passion fruit juice.
  3. Secure the lid on the cocktail shaker and shake vigorously for approximately 20 seconds.
  4. Strain into a chilled cocktail glass until ¾ full.
  5. Add the ½ fresh passion fruit then top up with champagne.
