Roast Chicken and Maple Caesar Salad

Ingredients
For the Caesar dressing:
- 60g mayonnaise
- 60ml buttermilk
- 60ml pure maple syrup (preferably amber syrup for its rich taste)
- 3 tbsp Parmesan cheese, freshly grated
- 1 garlic clove, grated
- ½ tsp ground cayenne pepper
- Squeeze of fresh lemon juice
- 2 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- Salt and black pepper, to taste
For the salad:
- 1 whole roast chicken
- 2 Romaine lettuces
- 1 cup croutons
- ¼ cup Parmesan cheese, freshly grated
Method
- Add all the dressing ingredients to a bowl and whisk until combined.
- Use your hands to tear the roast chicken from the bones and shred.
- Place the roast chicken slices, lettuce, croutons, half the parmesan and dressing into a large bowl and toss to combine.
- Top with the remaining parmesan and serve.
