The Smokin Elk’s Bacon Wrapped Stuffed Pork Fillet with a Maple BBQ Sauce Glaze and Maple BBQ Beans

Ingredients
FOR THE BACON WRAPPED PORK
- 1 pork fillet
- 3 sausages
- 150g grated cheddar cheese
- 1 pack streaky bacon
FOR THE BBQ GLAZE SAUCE
- 250ml ketchup
- 60ml apple cider vinegar
- 20ml pure Canadian maple syrup (preferably amber syrup for its rich taste)
- 2 tsp Worcestershire sauce
- 2 tsp mustard
- 1-2 tsp hot sauce
- 1 tsp salt
- 1 tsp pepper
FOR THE MAPLE BBQ BEANS
- 1 onion, diced
- 2 tbsp rapeseed oil
- 2 garlic cloves, crushed
- 1 tin chopped tomatoes
- 2 tins of beans, drained (cannellini or haricot beans)
- 200ml maple bbq glaze sauce
- 50ml pure Canadian syrup (preferably amber syrup for its rich taste)
- 2 tsp dried thyme
- 2 tsp hot sauce
- 2 tsp Worcestershire sauce
- 1 tsp salt
- 1 tsp pepper
Method
TO MAKE THE BBQ GLAZE SAUCE
- Mix all of the bbq glaze sauce ingredients together until combined. Set a small bowl aside for glazing the pork. The rest will keep in the fridge for 4-5 days.
TO MAKE THE BACON WRAPPED PORK
- Set up your BBQ for 2 zone cooking. Place hot coals on one side and have a cool zone on the other. Use the vents to dial in your temperature to around 220C.
- Add a chunk of seasoned wood to the coals for the smoke. Cherry, apple, oak or maple will work great.
- Next, you want to butterfly the pork fillet. Cut along the length of the fillet, being careful not to cut all the way through. Lay the fillet out flat.
- Slice along the side of the sausages and remove the meat from the skin. Spread this meat over the pork fillet.
- Sprinkle the cheese all over the sausage meat.
- Lay out a packet of streaky bacon, the length of the pork fillet. You want a slight overlap between each piece of bacon.
- Lay the pork fillet on top of the bacon then wrap the fillet in the bacon, making sure there aren’t any gaps.
- Add the pork to the indirect side of the BBQ and cook with the lid down for 30 mins. After 30 mins, start brushing on the maple BBQ sauce glaze.
- Continue to cook with the lid down until the internal temperature reaches 70C then remove, rest and serve with maple BBQ beans!
TO MAKE THE MAPLE BBQ BEANS
- Gently fry the onion in the oil until soft.
- Add the garlic and cook for another minute.
- Add the remaining ingredients and simmer for 45 mins, until thickened to your desired consistency.
- Taste for seasoning and adjust to preference.
