Vegetarian ‘Sausage’ Rolls with a Maple Glaze

Ingredients
- 375g pre-made puff pastry
- 275g breadcrumbs
- 225g grated cheese
- 1 brown onion, grated
- 3 tbsp double cream
- 2 tsp English mustard
- Handful of fresh parsley, chopped
- 1 tsp cayenne pepper
- 1 tsp poppy seeds
- 1 egg
- 1 tbsp pure maple syrup (preferably golden colour for its delicate flavour)
- Sea salt and pepper, to taste
Method
- Pre-heat the oven to 220°C
- In a bowl, add the cheese, onion, cream, mustard, parsley and cayenne pepper to the breadcrumbs and combine
- Season the mixture and set aside
- Roll out the puff pastry and cut into three equal strips
- Divide the filling into three portions and place on the one side of each pastry strip
- Fold the pasty over, use a fork to seal in the filling and cut into 3cm pieces
- Beat the egg and maple syrup together in a bowl
- Snip the top of each roll and brush with the maple egg wash
- Place the rolls onto a baking sheet and sprinkle with poppy seeds
- Bake on the top shelf for 20-25 minutes
- Remove from the oven and leave to cool on a wire rack before serving
